Smoked Cod Burgers

This weekend was spent doing a very fun culinary activity: cold-smoking fish. This sounds sarcastic, but it was actually really exciting! Recently, my father invested in a crowd-fund for an 'Aquaforno' (website linked below), which is a type of oven that can do anything from smoking, to cooking pizzas, to cooking casseroles, making bread, drying socks ... The opportunities are endless! Anyway, I decided to experiment with smoking fish using hickory wood, as I have loved the taste of this shop-bought. It was pretty simple, we just laid the fish on a grill in the oven and burnt some soaked wood-chips at the bottom for 2 hours, turning the fish over halfway-through. The result was delightful. The smokiness was light and not overpowering and the flavour was delicious. And all I used were cod and mackerel fillets from Tesco! I then transformed the smoked cod into burgers, which I outline in the recipe below, and they were so damn good. I served them in flatbread, topped with a dollop of harissa yoghurt dip, fresh tomato salsa and chilli jam and alongside some big salads. Great for barbeque weather, and makes a change to your bog-standard sausage in a bun.
Spiced Smoked Cod Burgers
Serves 4
Prep Time: 20 mins
Cook Time: 15 mins
Ingredients:
4 smoked cod fillets
Ginger (thumb size piece)
1 chopped chilli (deseeded)
1 tbsp paprika
1 lime
1 egg
Salt and pepper
Plain flour
Method:
1. Lightly sauté the ginger for a few minutes until it is golden brown.
2. Dice the fish so that it is easy to blend, but leaving it relatively chunky, so it does not turn into mush.
3. Add all the other ingredients into a ball and use your hands to shape into patties.
4. Sprinkle some flour into a ball and lightly coat the burgers before placing them into an oiled pan onto a high heat.
5. Cook on one side for 10 mins before turning and cooking on the other side for 5 mins.
Harissa Yoghurt Dip
Ingredients:
3 tbsp yoghurt
1/2 lemon
1 tsp harissa paste
Salt and pepper
Tomato salsa
Ingredients:
A couple of handfuls of cherry tomatoes
1/2 red onion
1/2 lime
Splash of red wine vinegar
1 tsp sugar/agave nectar
Salt and pepper
