Black Bean Fettuccine with Avocado-Pesto Sauce

So, I have recently discovered legume-based pastas and am obsessed! I was initially given it to try by my hosts in LA (yes, classic LA style), and loved it. Although it is a bit drier, and perhaps more the texture of noodles than pasta, I prefer it as it is lighter but still satiating, fulfils the craving for comfort food and is a healthy portion of legumes in your diet! I have tried mung-bean and black bean spaghetti and would buy it again and again if it wasn't so goddamn expensive. If you want to give it a try, it is available in Whole Foods, Planet Organic, Holland and Barrett and most health stores. I would recommend adding a lot of sauce though. I experimented with mixing a creamy avocado-pesto sauce into my black bean fettuccine and adding fresh cherry tomatoes, olives, courgette ribbons, some tuscan bread that was soaked in an Italian dressing (leftover from a panzanella salad, bit odd but made it a bit more filling), and finishing it off with a sprinkle of Mara Seaweed. This is another new discovery - it was given to us as a present, and comes in the form of dry, flaked seaweed. Doesn't sound very appetising but adds a salty flavour that it a great, healther alternative to salt!
Serves 1
Preparation time: 15 mins
Cooking time: 4-6 mins
Ingredients for Avocado Sauce:
1/2 avocado
1 garlic clove
1 lime, juiced
1 tbsp nutritional yeast
1 tbsp olive oil
1 tbsp pesto
Salt and pepper
Splash of water (add more, depending on how thin/thick you want the sauce to be)
Serve with:
1/4 pack black bean pasta
Handful of cherry tomatoes, halved
1/2 courgette, peeled into ribbons
1 tbsp bread crumbs
Handful of black olives, pitted
Method
1. Put the pasta into boiling water for 4-6 minutes.
2. Make the avocado sauce by wizzing all the ingredients together until smooth and creamy.
3. Drain the pasta, saving a tiny bit of the pasta water and stir that in with the sauce and courgette ribbons.
4. Put in a bowl and add the tomatoes, olives and bread crumbs on top, or mix them in.
